Epernay

N.V. Moet & Chandon “White Star” – This rich sparkler (a blend of Chardonnay, Pinot Noir and Pinot Muenier) has richness and acidity. This house is famous for its Dom Perignon and is renowned for its merger with the big leather company Luis Vuitton. Since Champagne is a palette-cleansing aperitif, it should be enjoyed before every meal, not just on special occasions. Since Champagne goes down quicker than normal wine, people get happy, quick. Last tasted 2007 Drink now 

1990 Dom Perignon - It smelled like it could've been a big red wine, it was so full-bodied and luscious. What am I sitting in a cool river eating wet stones? I feel like a deer drinking fresh mineral water with dandelion aroma's rising from the water like mist as I stare at sunflowers nearby. It'd be nice to sit down and watch the wine's evolution? Last tasted 2007 Drink now-2015 

Wine and Waves
I'm lucky to be a 31-year-old surf punk that gets to sample rare wines like the 1922 Pol Roger, the 1959 Petrus and the 2001 D.R.C. Richebourg--that doesn't mean those wines are always good, or worth the price. Since I've worked as a sommelier (in Monterey, CA) for high-end restaurants like Casanova, the Sardine Factory, and Marinus, I've honed my palate and I can choose a good bottle that won't break the bank. When I have enough time and money, I like to travel with my girl Lindsay Jackson to places with great wine and waves.
