Reims

N.V. Taittinger - It was lemony, really rich, and a little fleshy. It had a long finish that would radiate to your fingertips. It was real viscous but amazingly easy to drink. This wine makes you feel ecstatic and sensual. This stuff should be drunk with adult supervision. Last tasted 2007 Drink now-2015 

M.V. Krug Grand Cuvee' $110 - the richness of this wine complements its acidity. Need I say more? The person I poured this wine for was celebrating her birthday. She had a diamond necklace and I knew she was a candidate for such a nice wine. It was super foamy and not overtly acrid like some cuvee's. Table 29 is a great place for such an occasion. N.V.Veuve Cliquot “Yellow Label” – The bubbles were so tiny you needed a microscope to see them. And, that’s a good thing! With citrusy lemon notes and rich hazelnut nuances, this makes people feel sophisticated, even if they’re not. With a bottle of Veuve on the table, others customers sometimes feel inclined to spend money on wine. Madame Cliquot is the one credited with inventing the riddling process (bottles are turned during secondary fermentation so deposits can be removed later). This house is famous for La Grande Dame, arguably some of the best Champagne in the world. Remember: when the cork is released it should be the sound of a kiss, not the sound of a fart. After all, you don’t to lose those bubbles. Last tasted 2007 Drink now 

1979 Veuve Clicquot "La Grande Damme" - I think I drank this the day before Thanksgiving. The wine wasn't overly acrid like some Champagnes but was slightly oxidized as expected. I remember it being bready with lots of minerals and kind of appley and definitely sexy. Last tasted 2007 Drink now 

1999 Cristal - If I had been without sleep for two days and I needed a pick me up, this wine would get the job done. It was instant gratification. Give me some oysters and call it a day. Last tasted 2007 Drink now-2015 

1996 Cristal Rose - the best Champagne I've ever had. You couldn't taste the alcohol, there was no harshness or bite and was kind of luscious. Last tasted 2007 Drink now-2015 

1996 Cristal Rose’ - $600– Highly citric airborne orange flavored vitamin c tabs. What is this Pez and Fun-Dip candy? I poured too much. I should’ve filled their glasses halfway so that they could’ve swirled more. Birthday party on table 20! Last tasted (10/4/07) Drink now-2015 

Wine and Waves
I'm lucky to be a 31-year-old surf punk that gets to sample rare wines like the 1922 Pol Roger, the 1959 Petrus and the 2001 D.R.C. Richebourg--that doesn't mean those wines are always good, or worth the price. Since I've worked as a sommelier (in Monterey, CA) for high-end restaurants like Casanova, the Sardine Factory, and Marinus, I've honed my palate and I can choose a good bottle that won't break the bank. When I have enough time and money, I like to travel with my girl Lindsay Jackson to places with great wine and waves.
